The Tzawar
The Tzawar (Agave andean or penco blue), which is considered a sacred plant, has been and is very important in the identity of the ancestral pueblos andinos, as their productive dynamics, ecological, nutritional, are intimately related to the uses, knowledge, bio knowledge and ancient techniques that have been handed down from generation to generation through the practice and orality, which has led to the coexistence of human beings with this natural remedy.
Cultural significance
The cultural importance of the agave in Ecuador is reflected in the strong interest of the National Institute of Cultural Heritage, to include it in the “Representative List of Intangible Cultural del Ecuador”, with the aim of safeguarding its manifestations, uses, traditions and customs. In the same way, we highlight the recent declaration of protection of the Appellation of Origin: “MISKE” (Distilled fine agave), leading to their unique role in the cultural identity and heritage of the andean region.
